After a bit of a hiatus in the recipe creation world, I dove back into cooking at home this month. I tend to seek out recipes that are easy from start to finish, including little cleanup and that may even produce some tasty leftovers. This week, I’m excited to share a new recipe for Lemon Pesto Chicken Pasta. This dish lines up with my recent tastes for Mediterranean fare and Barilla Ready Pasta is helping me create the perfect pairing with their Barilla Basil Pesto sauce. This recipe is perfect for a filling and heart healthy dinner, but also makes a great desk lunch at work. The best part of this recipe is that you only need 10 minutes start to finish if you’re using pre-prepared proteins. Read below as I walk you through the deliciousness.
What You’ll Need:
- Prepared chicken (Rotisserie or baked tenderloins such as the ones I prepared for my weekly meal prep)
- 2 large lemons
- 1 bag Barilla Ready Pasta Penne (Available at Walmart)
- 1 jar of Barilla Basil Pesto sauce
- A tablespoon of olive oil
- Pre-cut veggies of your choice – I’m using broccoli and sun-dried tomatoes
- 2 cups of water
- Salt
- Pepper
- Garlic powder
Directions:
- Place any pre-cut veggies in skillet and fill with water until just covered. Allow veggies to boil just until tender and drain water.
- Add the whole jar of pesto sauce, juice of both lemons – be sure to remove the seeds, and olive oil to vegetables in skillet and heat over medium, stirring until combined.
- Cut up protein (prepared chicken) into bite size strips and add to skillet.
- Microwave Barilla Ready Penne for 60 seconds after venting the package. Add pasta to skillet.
- Season to taste using salt, pepper, and garlic powder.
